This Slimming World inspired recipe makes a great family supper, bursting with flavour and fresh vegetables. You can also add any other vegetables which take your fancy, for example sugar snap peas, peppers, savoy cabbage, mushrooms, the ideas are limitless.

For a gluten free alternative substitute the soy sauce with gluten free soy sauce and use rice or rice noodles in place of the egg noodles.

Ingredients

6 tbsp dark soy sauce

1 garlic clove, crushed

2.5cm piece of fresh ginger, grated

550g skinless, salmon fillet

250g dried egg or rice noodles

Low calorie cooking spray

Juice and grated rind of 2 limes

2 courgettes cut into battons

450g Chinese-style stir-fry vegetables

200g beansprouts

225g tin bamboo shoots, drained

2 tbs chopped fresh coriander

Lime wedges to serve

 

Directions

Mix the soy sauce, garlic, lime zest and ginger in a bowl. Add the salmon and toss to cover the salmon in the marinade.

Cook the noodles according to the instructions on the packet and drain.

Drain the salmon from the marinade, reserving the liquid, and lay onto a tray covered in foil. Cook under a hot grill until cooked.

Spray a wok with low calorie cooking spray, add the courgettes and stir fry for 2 minutes. Add the stir fry vegetables, beansprouts and bamboo shoots and continue to fry for 3-4 minutes.

Add the cooked noodles and continue to cook and stir to combine.

Stir in half of the remaining marinade.

Divide the noodles between 4 plates, top with the salmon, then pour over the remaining marinade.

Sprinkle over the fresh coriander and serve with lime wedges.
